I have what I like to call a love/hate relationship with cooking. They’re weeks I’m totally stumped and feel I eat the same thing everyday… other weeks (like the past couple and you can tell from my Instagram) I cook up a storm.  They’re several factors that go into this relationship. One I’m vegan and gf… and let’s get real, how many dishes can you make? Two, I’m not a great cook… I like things to be simple, so I don’t experiment with different ingredients that much. And third, a lot of times I’m making two meals. One for me and one for my guy (he is not gf or vegan). In the grand scheme of things, these issues are trivial and I mean, it’s just food, but I would love to hear how you get out of your cooking funk? How many times a week do you cook vs. eat out? What are some of your go-to meals?

  1. While my diet isn’t as restricted as yours, I try not to eat red meat and I don’t eat fish so my options as far as meats are limited. My bf (like yours) isn’t restricted at all so cooking for us both is rough. I try and cook things that work for us both, while getting him to stretch his palette.

    To get out of cooking funks I, ironically, make something really complicated and when it turns out well i’m proud of myself and re-inspired :)

    Your pasta dishes look so yummy i’m inspired to make a healthy pasta tonight!

    I try to make big batches of things on Sundays that will last a few days for lunches so weekly I cook 3-4 times. We rarely eat out because I have a phobia. I know, I need help.

    I cook pretty much every night except one when we’ll eat out. I also make my breakfast/lunch and pack a lunch for my husband. I’m vegan and he’s vegetarian. He eats what I make though. There are lots of great vegan gf blogs out there with lots of recipes!

  9. I made a really great quinoa fried rice once! You can easily make it vegan or non-vegan by just a couple of different ingredients! Below is a link to a great recipe…just take out the eggs and ham and you have the vegan version!

    @Hayley- Asos sizing is always hard to judge. They have different brands they sell so you can never tell. Their returns have been super smooth, one of the reasons I love ordering from them.

    Ah you have the leopard ettas! Love them but cannot spend $350 on shoes right now. lol (Also I think i want leopard heels with a stiletto heel first…haha)

    As far as cooking – I’ve also been cooking up a storm recently and my motivation is mostly that I want to save $ so I can spend on clothes and shoes and bags. LOL But also because after I roasted a chicken on Christmas Eve, I rediscovered the fact that I actually like cooking and putting meals together! haha This Saturday I’ll be making tacos (SO easy) to watch the 49ers game! :) Your meals do look simple, but sometimes simplicity is best when it comes to food, and that way you really taste the flavors you actually put in :)

  13. I would love to see some of your recipes on the blog! I’m a vegetarian who doesn’t cook — I’m certain you could teach me a thing or two :) All your food Instagrams are always so pretty!

  16. I’m with ya! I am mainly the “cook” in the relationship and while I don’t mind it, I can get less than inspired sometimes. The husband is the baker so at least desserts are covered!

    I am like you where I often rely on the tried and true and also stick to familiar ingredients. But, I do like to experiment. I get nervous since I hate to waste food if it comes out badly but that’s the only way to learn! Because of my “failed” recipes, I now know what amount of seasoning I like, the types of flavors that will work well and when not to follow a recipe to the T because I know that it just won’t work for me. I’ve come a long way even though I would never consider myself a good cook.

    I am interested in knowing more about GF cooking though. Not because my husband or I need to follow it but I’m just curious to feel the health benefits. Do you find a difference that you just swear by?

  19. The time of the day that hate cooking the most is at night! My go-to meals are quinoa salad (with avocado, pecans, shaved parmesan, and some arugula), and bruschettas ;)
    I’m loooooving those new pumps and that coat!! dying!!

    A post close to my heart! Not only do I love, love, love these photos snaps (so gorgeous!), I also completely understand your relationship with cooking. I am pretty much exactly the same, and though I’m not technically a vegan, I don’t eat meat or most dairy. I get the challenges. I am often inspired by Pinterest, and find that dedicating yourself to pick 2-3 dishes a week from your “food board” can be helpful. Also, planning out the meals for the week and getting the associated groceries at the beginning of it can be helpful. I also cook up a storm on Sundays and eat those dishes throughout the week.

    I also try to remind myself that (for me) being in the kitchen is therapeutic and stress relieving. Once I get going with my preps and cooking, as well as my cleanup, I instantly feel more at ease about my day.

    I don’t know if any of that is helpful, but it’s just a few little things that I do!

But then there’s those afternoons, I’m like, cooking nah. haha. I also try to remind myself that cooking is therapeutic, love prepping with music and glass of wine :)
