This garlic-y lemon and white wine pasta is one of my favorite go-to’s. It’s light but still super flavorful. It’s one of those add-whatever-you-have-in-your-kitchen kinda dishes. This one includes asparagus, tomatoes, pine nuts, and parsley. So good and healthy!
Ingredients
Brown rice spaghetti (Trader Joes)
Garlic
Shallots
Tomatoes
Asparagus
Pine nuts
Parsely
Red chili flakes
White wine
Lemon
Olive oil
Salt & pepper
Directions
1. Boil brown rice spaghetti. Takes about 8 minutes. Rinse pasta under cold water and let sit.
2. Saute garlic, shallots, red chili flakes and olive oil until garlic yellows.
3. Squeeze a whole lemon and add about a cup of white wine and let simmer.
4. Add asparagus and saute until tender. If you need to add more white wine, do so here.
5. Add tomatoes and pasta and toss a couple of times until the pasta is hot enough to serve.
6. Salt and pepper to taste.
7. Throw in some pine nuts, top with parsley, and serve!

I bought this skirt last year, but tossed it aside to the donate/sell pile because I could never style it right. Although it has a simple cut and is plain white (how basic does it get?), it always felt too girly for me… until I recently revisited it and realized, with the right pieces, it serves at the perfect blank canvas and can be styled many different ways. For last week’s warm weather, I paired it with a simple white tee for a laid back vibe and to toughen it up I threw on my oh-so-beloved denim vest and spike sandals. Anyone else really loving white on white, lately?
Sometimes you have revisit those items sitting in the toss pile… you never know, you may rediscover a gem!

If you saw this Instagram post then you know last week was one of the hardest weeks I’ve had in awhile. Mike was gone on an overnight school field trip for three nights, so I was alone with Lola. Between the crazy terrible-two’s behavior and a mild scare (everything is fine) on Tuesday night that resulted in a visit to the vet Wednesday morning, I was completely and utterly drained. I cannot tell you how relieved and happy I was to see Mike on Friday at 1:00 pm. Since all three of us had quite the week, we spent this weekend recuperating and relaxing. I played soccer Saturday which was a nice stress reliever, picked up flowers and stocked up the refrigerator, made some progress with Lola in the training department (less biting more playing), and finally left her alone for more than an hour while we ran a few errands. Although they’re baby steps, this threesome is making progress, woohoo!
The good news, it can only go up from here, right? At least this is what I’m telling myself everyday… I hope you all had a wonderfully relaxing weekend. Cheers to a great week!

Versatile, versatile, versatile. I can’t tell you how important it is to build your wardrobe around versatile pieces. You get to mix and match to create different outfits, you get a ton of wear for your investment, and you can wear them from season to season. Other than a few coats and maybe heavier sweaters, I never rotate my closet by season. I like the idea of incorporating a cozy sweater with denim cut offs and sandals, boots with a dress, or heavy textures with something more lightweight. It’s all a little unexpected and I like that. And to be honest, a lot of times, I buy a piece thinking about how many times I can wear it all year rather than just for spring or winter.
Today, I’m sharing how to transition one of my favorite fall looks to make it more spring appropriate. To do this, I swapped out a black tee for a white one to brighten things up and opted for leopard sandals instead of pumps. The look is obviously very similar, but with a few simple tweaks and some versatile pieces you can easily transition your favorite looks from season to season.
